Chocolate Coconut Bread – Keto/Low Carb

Hey There!
Another keto recipe! Today I have a chocolate coconut bread for you all. This is a great sweet treat with none of the guilt! If you want to play around with this recipe feel free to, just remember that when you are working with coconut flour that you want about 6 eggs to every ½ a cup of flour that is used. This will give you the best consistency.
Until next time please take care!

½ cup coconut flour
6 eggs
1 TBSP baking powder
¼ cup of coconut oil
¼ cup cacao/cocoa powder
20 grinds of vanilla whole vanilla bean (optional)
Shredded coconut flakes
Combine all ingredients except coconut flakes into a batter
Spread into a greased pan
Cook at 350 degrees Fahrenheit for at least 20 minutes (checking in five minute increments until fully cooked, toothpick test)

Hello! I made this bread this morning and decided to add about 20 drops of liquid stevia. Even so, it seemed pretty bitter to me. Is that what you’re aiming for? Bitter bread? If so, you hit the mark. Next time, a think I’ll add at least a half cup of swerve and instead of vanilla, I’ll try some coconut extract. Wasn’t that fond of the coconut flakes, they were not that user friendly. The coconut extract should complement the chocolate flavor. To offset the bitterness, I made some sweet whipped cream and it went great with the not so moist and bitter bread. Thanks for the recipe, though.

Looks good, I'm just worried that it will be a bit too bitter for me. Maybe I'll make a loaf as is and then make one with some sweetener, hmmm oh the dilemma, LOL.

This looks good but it seems just about every chocolate sugar-free sweet that I make tastes very bitter and really not worth the effort LOL
