KETO CAULIFLOWER MAC & CHEESE – I could swim in this sauce, it's so good!

Seriously, this sauce will have you dancing. And it’s so good that you can’t even taste the cauliflower in this recipe! I prefer making this cauliflower mac n cheese over regular mac n cheese because it’s actually easier and I don’t have to wait so long to cook the noodles. Cauliflower steams faster than it takes to boil noodles.

This cauliflower macaroni and cheese is creamy, cheesy and will leave you wanting seconds.

Serves: 4
1 pound cauliflower florets
3 tablespoons almond flour
3 tablespoons butter
1 cup heavy cream
1 teaspoon salt
6 oz sharp cheddar cheese, shredded
3 oz gruyere cheese, shredded

1️⃣ 00:21 – To a large stockpot, place a steamer basket into the pot and fill the pot with 1 inch of water. Bring to a boil. Add the cauliflower florets to the steamer basket, cover and let steam for 3-5 minutes or until cauliflower is fork tender. Remove from heat and any water and set aside.
2️⃣ 00:48 – To a medium sauce pan, melt butter over medium heat. Sprinkle in almond flour and stir for 30 seconds.
3️⃣ 01:19 – Slowly add heavy cream while stirring constantly. Add salt. Let mixture come to a boil and let simmer for 5-7 minutes or until mixture has thickened enough to coat the back of a spoon.
4️⃣ 01:58 – Once cream base has thickened, slowly add in shredded cheese, adding in a handful at a time and stirring until smooth. Continue until all the cheese has melted and cheese sauce is smooth and creamy. Remove from heat.
5️⃣ 03:14 – Add cauliflower florets into the cheese sauce and stir until florets are well coated. Serve immediately.

I know this is got to taste really good! I like cauliflower a lot. I was wondering why the cheese sauce looked kind of pinkish. Maybe it’s due to the almond flour. Anyhow thanks for posting this keto recipe. It looks delicious.

In the UK this is simply called cauliflower cheese and it’s a standard and popular dish. Generally served as a side with a roast dinner. There’s no association with it being a substitute for macaroni, which we rarely eat

Yummm…bet this would be really good w/that low carb gnocchi recipe that's making the rounds lately, the one made from 'chicken dough'. Mac & cheese is one of my husband's favorite foods ever, & he loves it in pretty much any form. Maybe I'll surprise him, & make it w/crispy roasted cauliflower- which he also loves, & is my favorite way to eat it too =)
Thanks so much for inspiration~ love this channel for that! Also for the realization that almond flour can be used as a base for white sauce, which I had not considered~ AND gruyere & sharp together, which makes perfect sense too=) You're on it, as usual✨THANK YOU✨🙋‍♀️

That cheese sauce looks great. I want to make it and keep it in fridge/freezer to pour over cauliflower, broccoli, keto noodles, and just about anything else. Hummm 🤔 maybe even a little drizzle over a steak.

  34. Canuckmom1958 says:

Thanks for this. I was looking for a Keto Cheese Sauce recipe, to use with a variety of cooked Veg and also for Sunday Morning Eggs Benny replacement. Awesome. Luckily, I Love most vegetables, including Cauli, and made properly, Cauli mash is so close to mashed potatoes (unless you REALLY hate Cauli ).

Gruyère is (close to) impossible to English speakers because is a combination of difficulties, the R, the U, the Y ( two I in combination with the U and the R after!) the R again. Then don't worry. I need to give you my very easy French recipe for cauliflower: cook the flowers on steam, al dente, pour it into a big bowl, crash it a little beat with a fork, in another bowl mix 250 or more of sour cream with a cup of fresh grated parmesan plus a pinch of salt, pour this on the cauliflower, gently mix it, pour in a backing dish and put it on the oven (180 degree) for 20 minutes. Very simple, easy and tasty. In France we traditionally make it with a béchamel gravy and sometime put eggs boiled cut in two in this gratin, I make it to with my recipe and then it's a complet meal. Give it a try please and let me know. Best regards.
