If you are looking for the best Keto bread recipe, your search can stop here. I love pre-slicing this bread and having it on hand at all times for a good slather of grass-fed butter or peanut butter.
Having a carrier for fat makes it easy for those on a low carb or Keto diet to hit their fat macros, which are high. The Keto bread is made using almond flour, psyllium husk powder for structure, and egg whites.
The dough starts very dense and then rises considerably in the oven.
To shape the dough, the dough is formed into a log shape and then placed into a loaf pan which makes it easy to slice into individual portions post bake.Read More
You don’t need to be any kind of master baker to make keto bread. But it is worth investing in a good quality baker’s mixer and loaf pan to get a loaf ready to go. Before you begin the recipe you will need to pre-soak the psyllium husk powder and almond flour overnight. To make sure your ingredients are as evenly moistened as possible, make sure you take time to soak the psyllium husk powder and almond flour. Recipe I will be making my bread in a loaf pan for more flexibility when shaping the dough. This bread also comes out dense and so I recommend taking the time to wrap it before slicing. The texture is crisp on the outside and soft on the inside. If you have a hand, it is easy to shape the bread without this step.

Keep in the refrigerator until you are ready to use it. Mix egg and egg whites in a small bowl. Mix together remaining dry ingredients and in another bowl mix butter, egg and vanilla. Fold in the wet ingredients with a spatula and then add to the dry mixture. If your almond flour is dry, add a few tablespoons of water.
Psyllium Husk Powder
Psyllium husk powder is a slow-absorbing protein which is used to make foods ‘spreadable’. Nutritional information can be hard to find for psyllium husk powder but it is an essential supplement for people with IBS and who are looking for a stronger feeling of fullness. It is used as an alternative to cornstarch, which is an excellent Keto alternative. I prefer using psyllium husk powder because it has a texture similar to regular flour and can be used for everything from breads to cookies. Almond Flour In this bread recipe I used almond flour because it is higher in protein and very stable which is great for baking. I’m a sucker for almond flour because it is packed with healthy fats which make it a great base for Keto meals. It also makes it easy to transition from full sugar to keto.
The key to high protein, low carb diets is a high protein intake. Protein is the macronutrient that does not come from carbs, which will spike insulin levels. If you are avoiding fat you are also avoiding other macronutrients, like carbs and sugar, which will lower your protein and impact your fat metabolism. Eggs are a fantastic source of healthy protein with 13 grams per one egg. Almond Flour Almond flour is a grain free, gluten free flour. The essential fatty acids and monounsaturated fatty acids found in the almond are beneficial to a Keto diet because they have no carbohydrate value. We need the bulk of our fat in the form of saturated fat from grass-fed butter.

Step 1Preheat an oven to 350 F. In the stand mixer bowl, combine the almond flour, psyllium husk powder, kosher salt, and baking powder. Combine the ingredients with a paddle attachment.
Step 2Add the apple cider vinegar to the boiling water. Then slowly pour this mixture into the dry ingredients while the paddle attachment is spinning at low to medium speed. Then add in the egg whites. Feel free to use liquid egg whites to make the process of making this dough easier.
Step 3Turn the dough of the bowl with a dough scraper. Form it into a log shape to fit into a loaf pan. Have a standard loaf pan handy that has been sprayed with nonstick cooking spray. Place the dough into the loaf pan and then into the oven.
Step 4Bake the loaf for at least 1 ½ hours. If it starts to deflate at all while it exits the oven, be sure to bake it for another 30 minutes or so. Once the loaf is finished baking, turn off the heat in the oven and allow it to cool with the oven. Once cooled, turn it out onto a cutting board and slice it into twelve equal slices.

How long does Keto bread last at room temperature?
Since Keto bread is higher in water content, it doesn’t last more than three days at room temperature. If you are still enjoying your bread for up to three days, place it into the fridge or the freezer and put out what you need as you go.
