1 chicken thigh (about 1 1/2 pounds), cut into 8 equal strips

2 ounces white cheddar cheese (grated)

Preheat the oven to 400 F. Lay the strips of bacon on a baking sheet, add the chicken thighs and toss until all the bacon is covered, using a fork to hold the bacon tightly in place.
Repeat with the remaining chicken thighs. Mix together the eggs, seasoned salt and cheddar cheese. Dip the chicken thighs into the egg mixture until completely covered. Place on a baking sheet lined with parchment paper and bake for about 20 minutes or until the chicken is cooked through. Let cool completely before serving.
